Nyonya Kaya Recipe

This Kaya is made by my mom. If not because of this recipe blog, I will never bother to ask my mom for the recipe. I don’t like eating Kaya! Can you believe that? My children loves them; so does everyone else in the house.

My mom’s Kaya is different from those you get at the bread stand or supermarket; no added flour or preservatives. Pure eggs, sugar and coconut milk.

Here is her recipe…

10 Eggs
600 sugar
Coconut Milk from one Coconut
One inch fresh Tumeric

The method:
Out of 10 Eggs, remove the Egg white from 4 eggs. Beat well. Place the beaten eggs and sugar in the wok. Stir till the sugar melted. Throw in the tumeric (just smash it a lil bit, not sliced) to reduce the Egg’s smell and to make the Kaya more yellowish.

After the sugar has melted, sift to remove the unmelted particles. Sounds like lab experiment only! :lol:

As for the coconut, be sure the remove all the brown skin before grinding it. It must be pure white. Then use the white cloth (i dunno what u call it) to squeeze the coconut milk out. You cannot add water. We use pure thick coconut milk.

Mix it with the melted sugar and eggs, mix it well and steam it for 3-4 hours till it becomes thick like jam.

When steaming, you can’t just let it there and go watch TV, blog or take a nap. You have to stir the mixture from time to time.

Quite troublesome eh. The ingredient may be simple but to turn it into Kaya takes a lot of time, energy and patience.

Now you know right. So don’t complaint why Kaya is so expensive! :P

Moist Chocolate Cake

I love baking since my mom said “Yes, you can use the oven.” My first try was baking cakes. The person that appreciates my cake the most is my dad. I remembered baking Chiffon Orange Cake on one Sunday afternoon then took it to my dad who was working his corn field. The next day, he told my mom to ask me bake some more! That was a start to many more cake baking adventure.

Here is the recipe that my dad love the most; Moist Chocolate Cake. Have not been baking this for a while though. Used to bake this every year for Chinese New Year.

250g Butter
350g Sugar
250g Flour
6 Eggs
1 tsp Sodium Bicarbonat
21/2 tsp Baking Powder
1 Bar of Dark Cooking Chocolate; melted

Bake at 175’C for 45 minutes to an hour.

How To Make Peach Muffins

Very easy! Buy a can of peach. Slice them up but not too thin, it will be too dry after being baked. Use my Muffins in 30 minutes recipe. Bake for 15 mins take the muffins out and place a slice of peach on top of the muffins and bake for another 5 minutes.

There you go; Peach Muffins. :D

Ikan Goreng Halia

This dish is great for children coz it has lots of gravy. Good as confinement dish coz got lots of ginger. My mom loves to eat this with porridge when she has sore throat.

The ingredients are thinly sliced Ginger, garlic, soy bean paste (taucu), dark soy sauce water and salt.

The fish needs to be deep fried first.

Then prepare the gravy. Fry them till aroma the add water, dark soy sauce and salt to taste.

That’s all.

Food for Baby Showers

What do you normally bring to a baby shower besides baby shower gifts. Oh ya! To the soon-to-be mommy, don’t buy any baby stuff before your baby showers. You might get lots of them during your baby showers!

During baby shower, there will be a gathering of family, relatives, friends and mommies. There must be food serve to make them stay longer and celebrate the occasion right?

When you are pregnant, I am not so sure whether you would have all the energy to prepare an elaborate food for your guest. Let me suggest some of the simplest and quickest way to prepare delicious finger food for your guest.

One of them is of course my favourite; muffins! In one hour time, you can get more than 30 muffins on your table. Then we have the Egg Mayo Sandwiches; healthy and wholesome. Or just buy some nice square cookies and spread tuna on it. It won’t cost you a fortune and it will definitely keep your guest busy munching and chatting away. No eating tables needed and not much cleaning to do after that too. Who has the energy to do all that unless you have a maid to help you out.

Sweet Sour Chicken with Potato

This is another simple and quick dish to prepare; kids love this, me too! I will eat it all by itself without rice.

Here’s what you need:
Meat - Chicken or Pork. Marinate it with some sugar to tenderized the meat. The coat it with corn flour and deep fry. Set aside.
Potato - sliced, coat with corn flour too and deep fry. Set aside.
Sliced Onion
Garlic
Tomato Sauce
Chilli Sauce
Water
Salt

The sauce:
Fry the garlic and sliced onion till aroma.
Then add in the tomato sauce, chili sauce, water and salt.

Once the sauce thicken, add in the fried meat and potato.

You are done!

The Best Udang Lemak Nenas!

I had this for lunch just now and packed some for dinner too. :D

I tried Udang Lemak Nenas in a few famous Nyonya restaurant in town; none can beat my mom’s. I am not bias; even friends that tried my mom’s Udang Lemak Nenas agree to it. Don’t believe, buzz me when you are coming to Malacca, I get my mom to cook for you.

I tried once but did not turn out as good as my mom’s; mine looks very pale. See also no appetite to eat. :lol:

Cookies

So far I never come across anyone saying NO to cookies unless they are on diet program; they are exceptional. When visiting friends or relatives, cookies are the best and easiest to obtain gift to bring.

I love cookies; especially those Gourment Cookies. I tried making cookies before but I can never get the same as the one I ate which my friend bought from US. It has that soft texture; not the crunchy type. It is also so rich in flavor.
