chicken and potato soup

Let me start by saying “This is another Simple Nyonya Dish!” :lol: Since I need to put food on the dining table by 9.30am every weekday, I will always cook something simple and most importantly, my children will eat them.

The Ingredients:
1/3 Chicken
3 Potatoes
1 Stick of Carrot
4 Garlic
4 Shallots
A few slices of Ginger
1/2 Tbsp Mince Bean Paste (Taucu)
Water
Oil
and Salt to taste

How to Cook Nyonya Style Chicken and Potato Soup:
1. Pound the Garlic and Shallots.
2. Fry the pounded Garlic and Shallots then add in the Taucu and sliced Ginger. Fry till the aroma.
3. Add in one big bowl of water for the soup.
4. Throw in the Chicken, Potato and Carrot then add a dash of Salt.
5. Cover your pot.
6. Cook till the Potatoes and Carrots turn soft.

You are done! Easy right? :)

Chicken Pong Teh or Ayam Pong Teh

As promised, here is the Chicken Pong Teh recipe. We are having it for lunch and dinner (if it is still around. hehe) today.

For the above portion, I used below ingredients:

1/3 Chicken
3 Potatos cut in cubes
5 Chinese Dried Mushroom (sorry lar, dunno what’s the actual name) - soak in water to soften it.
8-10 Shallots
4-5 Garlic
1 Tbsp of Minced Bean Paste (Taucu)
Dark Soy Sauce
Gula Melaka (enough to make the gravy taste sweet)

Salt (add to taste)
Water for gravy

How to cook Chicken Pong Teh:
Pound Shallots, Garlic and Taucu. Fried them till you can smell the nice aroma. Add in the chicken. Stir fry for a lil while then add in the water and the rest of the ingredients. Cook them until the potatos are soft. Do cover your wok to expedite the process.

Today, I added 5 hard boiled eggs coz 2 of my children does not like to eat meat; eggs, anytime they will wallop. :)

Chicken Pong Teh is BEST eaten with Sambal Belacan.

Baked Chicken with Italian Herbs

Asianized Baked Chicken with Italian Herbs to be exact. :D I’m in the process of experimenting in baking chicken using my new Elba oven. :)

The recipe is almost the same as the Delicious Baked Chicken for Kids. I just add Lee Kum Kee Selected Dark Soy Sauce to it.

Anyway, here’s the recipe again. This time I just use the normal tablespoon, not the measuring spoon.

Ingredient for 10 Chicken Drumsticks:
2 Tbsp of Extra Virgin Olive Oil for you to give the drumsticks a good massage. :lol:
1 Tbsp of McCormick Garlic Powder; sprinkle of the drumsticks after the massage session. ;)

2 Tbsp of Lee Kum Kee Premium Brand Oyster Sauce
1 Tbsp of Lee Kum Kee Selected Dark Soy Sauce
4 Tbsp of Cap Lembu Light Soy Sauce
A dash of Salt
A dash of White Pepper

I mixed all of the above in a small bowl then I pour it onto the chicken drumsticks. This time I just use a spoon to mix them; not in the mood to dirty my hands. :P

Next, I gave them a good sprinkle of McCormick Italian Herbs. Then place the marinated chicken drumstick in a plastic bag and leave it in the fridge overnight.

The next day, I cut one large onion, placed them in the baking tray and spread them in the baking tray. This time I omitted the potato.

Since this chicken has no cavity for me to stuff the Lemon in, I just place the Lemon in the middle of the baking pan and arranged the drumsticks all around it. The Lemon gives the chicken a lil of zesty smell.

Then I covered the baking tray with aluminum foil and bake it for 1 hour at 200′C. After an hour, I removed the aluminum foil and let it bake for another 10 minutes to give the chicken a good tan.

I just love the smell of the Italian Herbs and the Asian taste. :D

Delicious Baked Chicken for Kids

This recipe is suitable for kids who don’t take spicy food at all because there is no grounded black pepper or paprika like most baked chicken recipe.

Ingredients:
1 Whole Medium chicken without feet, head and wings.
2 Medium Potatoes, cleaned and cut into cubes.
1 Large Onions, cut into 8 pieces
1 Whole lemon, skewered with a satay stick

To Marinade:
1 small cup extra virgin olive oil
A dash of Italian Herbs
A dash of Garlic Powder
A dash of Salt
3 tbsp Oyster Sauce
1 tbsp Light Soy Sauce

Here’s how I marinated the chicken. Firstly, I mixed the Oyster sauce and the Light Soy Sauce in a small bowl; put it aside. Then I massage the chicken with the extra virgin olive oil; give the chicken a good massage. :D After that, I rub the sauce all over the chicken. Sprinkle some Italian Herbs, Garlic Powder and the Salt all over the chicken; don’t forget in the cavity too. Lastly place the marinated chicken in a plastic bag and leave it in the fridge from 6 hours or overnight.

To bake, heat up the oven at 200′C. Lay the potatoes and onion in the baking dish, pour 1/2 cup of water so that the potatoes won’t dry up. You can add other vegetables like pumpkin,carrots or cherry tomatoes.

Place the chicken on the potatoes and don’t forget to stuff in the Lemon in the chicken cavity. Cover the baking dish with aluminum foil if you do not want your chicken to get burnt like mine! Bake for 1 hour.

If you want the chicken skin to be slightly burnt, open the foil and let it bake for another 10 minutes. That would give the chicken skin some tan.

Here is how mine look like coz I did not cover it with the aluminum foil in the first place! I excused myself coz this is my first time baking chicken. :lol:

My children loves this dish A LOT. That is what matters most. :D

Steam Eggs with Mince Pork

This is one of my favorite dish when I was young and still my favorite till now because it is so easy to eat. Just mix it with rice, sit in front of the square box and eat. No need to worry about getting choke by any bones. And no need to chew so much.

Unfortunately, my children does not even want to try it the first time I cook it. I think it is because the dish does not look so appetizing. The 2nd time I cook the same, I don’t let them see it. I just mixed everything with the rice, get them to open their mouth and I feed them. They finished the whole plate of rice!

All you need are eggs, mince pork, tanghoon (optional), water, spring onion, oil, pepper, salt and light soy sauce to taste and fried shallot.

Firstly, marinate the mince pork (around 200g) with a lil bit of oil, pepper, salt and light soy sauce. Then mixed in some spring onion and tanghoon. Press the paste down into a bowl.

Beat 2-3 eggs with lots of water; add in some light soy sauce for colour. Pour this into the paste bowl and steam for 15 minutes.

Sprinkle the fried shallot and you are done.

Easy right? :)

Sweet Sour Chicken with Potato

This is another simple and quick dish to prepare; kids love this, me too! I will eat it all by itself without rice.

Here’s what you need:
Meat - Chicken or Pork. Marinate it with some sugar to tenderized the meat. The coat it with corn flour and deep fry. Set aside.
Potato - sliced, coat with corn flour too and deep fry. Set aside.
Sliced Onion
Garlic
Tomato Sauce
Chilli Sauce
Water
Salt

The sauce:
Fry the garlic and sliced onion till aroma.
Then add in the tomato sauce, chili sauce, water and salt.

Once the sauce thicken, add in the fried meat and potato.

You are done!

Black Pepper Beef Steak

That is the balance of the beef from this batch. Since I don’t have fresh milk with me and I got a bottle of Black Pepper Sauce, I just use that.

Pan fry the beef then heat up the Black Pepper Sauce. Steam some baby carrots and wahlah! I got me self a Black Pepper Steak for dinner. =)

Pan Fry Beef Steak with Cream Sauce

The above Beef Steak may not look appetizing but it taste sooooo good. With the help of The Chef (my Singh BIL), I learned how to cook my own beef steak since I love beef so much.

To Marinate the Beef:
Finely minced Garlic
Lea & Perrins Sauce
Black Pepper
A pinch of Bicarbonate Soda to tenderize the meat
Oh ya, a table spoon of Oyster Sauce to Asianized the taste.

The Sauce:
Butter
Flour
Milk
Beef Stock
A Pinch of Salt

The Method:

Fry the beef with olive oil and butter
Remove the beef and add more butter
Sprinkle some flour and stir well
Add in the milk, beef stock and salt and stir till it turns creamy.

Stew Pork

This is my version of Stew Pork. Super simple recipe for lazy mommy like me! :lol:

Thinly sliced Pork which is marinated with some sugar to make the flesh tender, one Clove of garlic and a stick of Carrot.

Put all those in a pot, add some Dark Soya Sauce, a dash of salt for taste and cover it with 3/4 pot of water.

Simmer it on low fire for about an hour.

It is done. My children favorite dish. Thank God for it! :D

Ayam Golek

Ayam Golek is the kampung style of Kenny Roger’s Roaster. They are grilled chicken.

This is one of my favorite supper too.
