Belacan Fried Rice is one of my favorite Fried Rice. If I eat out, it would cost me RM4.00 per plate. So today I decided to fry my own Nasi Goreng Belacan.

The ingredient is simple:
Shallots
Anchovies
Belacan
Bird Eye Chili (Cili Padi)

Must pound, cannot blend. If you blend, it will be too fine and when frying the aroma won’t be strong/nice.
Fry a tablespoon of mince garlic the add the above pounded ingredient. Fry till the Belacan aroma cucuk your lubang hidung (comes up).

Then add whaveter topping that you like. As for me, I only have carrot, eggs and crab sticks in my fridge. So that’s all I used.
I start with carrots, then salt to taste follow by eggs. Once the egg is fried, I add the crab sticks. Stir it a while then add the rice. Mix it well, add in a dash of dark soy sauce.
You are done.
Serve with fried shallots and sprinkle some pepper.
Best eaten with more slice chili padi in light soy sauce.

Ever since my 2nd girl started to wear specs, I started to cook more carrot dishes and food. And the best way to get those carrot into their system is by chopping them small and fried them with rice. They love fried rice. So I put lots of carrot in their fried rice and it taste so good.
Ingredients:
Cold Rice
Carrot
Char Siew (BBQ Pork)
Eggs
Prawns
Onions
Garlic
Oil
Salt
Sesame Oil
Pepper
Cooking method:
Fry the chopped Garlic and Onion till aroma then add in the chopped Char Siew. Stir, Stir, Stir then the carrots go in plus salt to taste. Stir, Stir, Stir. Then pour in the eggs. Make sure you break the egg first in to a bowl. You don’t wanna any rotten egg to land on your fried stuff. Fried till the eggs are all cooked. Throw in the rice. Mix well then shake in some sesame oil and pepper. Garnish it from fried shallot for nicer aroma.

Do you know how to cook rice? Everyone can cook rice but not everyone can get it right. When my MIL was not around, a few times hubby cook rice but ended up cooking a porridge. He put too much water in the rice cooker.
Different people has different method of measuring the amount of water for the rice. This is how my mom taught me and so far, my rice never turns into a porridge.
Wash your rice at least twice. Place your whole palm flat on the rice. Pour the water in. Be sure the water cover your palm nicely. Just cover your palm. Nothing more than that. That’s it. Wipe the rice pot dry then place it into the rice cooker and press the cook button. Then you are done.

To those who love cheesy food and fried rice, then you would love this recipe. East meets West.
Ingredients:
1 bowl of rice
2 slice of turkey ham
some chopped garlic and onion
1 tablespoon of butter
1 egg
1 slice of cheddar cheese (break into a few pieces)
Soy Sauce
Optional : Mix vegetables or any other veges that you like
Method:
Fried the onion and garlic with butter. Then, place in the turkey ham. Stir a while and add in the rice. Then, pour in the soy sauces. Mix well and put in the bowl. Break the egg on the rice and top it with some cheese. Steam it for 10 minutes. Ready to serve.

Salted Fish with Rice
My Favorite.
The salted fish must be fried till crisp. You can even eat the bones.
The rice must be warm.
Just a small piece of the fried salted fish with a handful of rice. Yes, you must eat with your hands. Use all your five fingers, not your palm. I’ll teach how-to later.
Most family who are poor used to eat like this for their meal.
I eat it because I love the aroma of fried salted fish and I like eating salty food when I was a small girl. I think, this helps me to stay thin (not slim).
