choc chip cookies

I got the original recipe from here. When I saw the recipe, I said to myself, “Hey, this is an easy recipe and I have ALL the ingredients. No extra stuff like Cinnamon powder or baking soda or other ingredients that can be found easily in the Mat Saleh country but not in Malacca. Gonna use chocolate chips and not M&M for my kids. Too much colouring.”

Here’s my own version of M&M Cookie recipe turned Double Chocolate Chip Cookies with Sunflower Seeds. :D

125g Pure Butter
1/3 cup Castor sugar
1/3 cup Brown sugar
1/2 teaspoon Vanilla Essense
1 Egg
1 ¾ cups of Self Raising Flour
2 tablespoon Milk Powder
1/4 cup Cocoa Powder
1/2 cup Chocolate Chips
1/2 cup Sunflower Seeds

1. Preheat oven to 175C.
2. Sift Flour, Cocoa Powder and Milk Powder, set aside.
3. Use a electric mixer to beat butter, sugars and vanilla.
4. Add egg and beat well.
5. Add the flour spoon by spoon until your mixer cannot move at fast speed then use spoon to mix the rest of the flour. :lol:
6. Add in the Chocolate Chips and Sunflower seeds.
7. Scoop about one tablespoon for each cookie and press them flat on the tray with baking paper. You have to press them flat ok, if not your cookies will be very fat coz we are using SR flour here.
8. Bake for about 10 minutes using top and bottom heating.
9. It will be a lil bit soft when the cookies just came out from the oven but no worries ya. Let it cool on the cooling rack and it will turn hard and crunchy.

This cookie will surely go into my Chinese New Year list of Cookies. :)

Nyonya Pineapple Tarts Pastry Recipe

Not many non-Baba Nyonya like to eat the original Nyonya Pineapple Tarts. They are crunchy, chewy and not buttery. Unlike the buttery rolled pineapple tarts which melt in your mouth.

Anyway, just for my safe keeping, here is my mom’s pastry recipe.

1kg of flour
8 Egg Yolks
4 Egg Whites
Planta Margarine; no measurement!

Add the margerine till the dough is soft. This is so subjective. My soft and her soft is totally different. I still have not get exactly 100% my mom’s dough. Sometimes, mine turned out too soft and she will come to the rescue and add more flour to get it just right. Sometimes it was not soft enough and she will add more margarine to get it just right.

I hope I will be able to master the Nyonya Pineapple Tarts Pastry soon.

Cookies

So far I never come across anyone saying NO to cookies unless they are on diet program; they are exceptional. When visiting friends or relatives, cookies are the best and easiest to obtain gift to bring.

I love cookies; especially those Gourment Cookies. I tried making cookies before but I can never get the same as the one I ate which my friend bought from US. It has that soft texture; not the crunchy type. It is also so rich in flavor.

Rolled Pineapple Tarts

This is my favourite rolled pineapple tarts and I only get this once a year. They are made by one of my SILs. She knows that I love them and she will give me a container just for ME! :D

Today, I asked her for the recipe…IT IS SO SIMPLE!!! I should have asked earlier. :P

250g Pure Butter
1 Egg
400g Flour

That’s it.

Simple right? ;)

Nestum Cookies

I just made Nestum Cookies to add to the CNY cookie collection. These are very simple cookies. Even if you never bake before, I am sure you won’t go wrong besides controlling the baking time. Yup, I got a burnt batch! My first time too. hehe.

These are the recipe…

250g Low Protein Floor Flour (hehe…why do I need a low protein floor! ahahaha)
250g Pure Butter
120g Fine Sugar
2 Eggs
3 Cups of Nestum
2 teaspoon Vanilla Essense

Method:
Whisk the butter until fluffy. Then add sugar, eggs and Vanilla. Mix well. Next add the flour. Once the flour has been mixed well, add in the Nestum. Mix well again.

Here is how it looks like after the mixing.

Then roll them into a size of a tiny ball, depending how you big want your cookie and use the fork to press it down.

Bake them at 150′C for 8-10 mins also depending on the size and thickness of the cookie.

This is what you will get after 10 mins.

This is what you will get if you make it thin and small but didn’t reduce the baking time. :P

Anyway, I only get one small batch burnt. :)

How To Make Pineapple Tarts Filling

If you love Pineapple Tarts and can eat them in dozens within an hour, I would suggest that you make them yourself. Pineapple Tarts are not cheap these days. I think easily you have to pay 70 cents for a piece if it.

The making of the filling is very simple.

Btw, I have only recipe for 30 pineapples. You do the division if you want to make in smaller scale. :P

All you need 2kg Fine Sugar, 1.2kg of Rock Sugar for 30 Pineapples and Kayu Manis (Cinnamon stick) plus Bunga Lawang (Star Anise) for the aroma. Cook them in the wok for about an hour until it turns golden like the above shown.

Those days, we use to grate the pineapple with our bare hand and boy do we suffer after that by thousand of cuts.

Now, we just send them to those who has the machine to grate it. For a few ringgits we save our beautiful soft hands. :)
